You
will need
1 kg beef sirloin, cut into
2.5cm cubes
12 wooden skewers
125 ml vegetable oil, for
basting
1 tsp dried red chilli
flakes, for sprinkling
1 tsp cumin, for sprinkling
2 lemons, cut into wedges,
to serve
For the marinade:
3 tsp sea salt
1 tsp sweet paprika
1 tsp ground nutmeg
1 tsp ground coriander
1 tsp ground Sichuan pepper
1 tsp ground ginger
1 tsp dried red chilli
flakes
1 tsp cumin
3 garlic cloves, finely
chopped
3 tbsp light soy sauce
80 ml vegetable oil
Method
- In a large mixing bowl add beef cubes followed by marinade ingredients. Mix well and marinate covered in the refrigerator for at least 30 minutes or overnight for a better result.
- Soak the skewers in water for 20 minutes, to prevent them from burning when you cook with them.
- Thread the beef onto the skewers and char grill on medium to high heat for 3 minutes on each side. Baste the beef with the oil as you cook and sprinkle with dried chili flakes and cumin.
- Serve with lemon wedges.
