Spicy Beef Skewers



Servings: 4-6
Preparation time: 5 minutes, plus marinating time
Cooking time: 10 minutes

You will need
1 kg beef sirloin, cut into 2.5cm cubes
12 wooden skewers
125 ml vegetable oil, for basting
1 tsp dried red chilli flakes, for sprinkling
1 tsp cumin, for sprinkling
2 lemons, cut into wedges, to serve

For the marinade:
3 tsp sea salt
1 tsp sweet paprika
1 tsp ground nutmeg
1 tsp ground coriander
1 tsp ground Sichuan pepper
1 tsp ground ginger
1 tsp dried red chilli flakes
1 tsp cumin
3 garlic cloves, finely chopped
3 tbsp light soy sauce
80 ml vegetable oil

Method
  1. In a large mixing bowl add beef cubes followed by marinade ingredients. Mix well and marinate covered in the refrigerator for at least 30 minutes or overnight for a better result. 
  2. Soak the skewers in water for 20 minutes, to prevent them from burning when you cook with them. 
  3. Thread the beef onto the skewers and char grill on medium to high heat for 3 minutes on each side. Baste the beef with the oil as you cook and sprinkle with dried chili flakes and cumin. 
  4. Serve with lemon wedges.
